Ingredients

  • 4 sirloin steaks (6-8 ounces each)
  • 4 tbsp unsalted butter, softened
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh thyme leaves (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Steaks: Pat steaks dry with paper towels. Season both sides generously with salt and black pepper. Let rest at room temperature for 10 minutes.
  • Heat the Pan: Heat olive oil in a large skillet over medium-high heat until shimmering.
  • Cook the Steaks: Add steaks to the skillet. Cook for 3-4 minutes on each side for medium-rare, or adjust timing to your preferred doneness. Use a meat thermometer for accuracy (130°F for medium-rare).
  • Make the Garlic Butter: While the steaks cook, mix softened butter with minced garlic and thyme in a small bowl.
  • Add the Butter: Lower the heat to medium. Spoon garlic butter over the steaks, basting them with the melted mixture for an additional 1-2 minutes
  • Rest the Steaks: Transfer steaks to a plate and cover loosely with foil. Let rest for 5 minutes to retain juices.
  • Serve: Garnish with fresh parsley and serve immediately with your favorite sides.

Notes

  • Use a cast-iron skillet for the best sear.
  • Letting the steaks rest ensures they stay juicy and flavorful.
