For the Crust:
- 1½ cups chocolate cookie crumbs
- 6 tbsp unsalted butter (melted)
- 2 tbsp granulated sugar
For the Cheesecake Filling:
- 16 oz cream cheese (softened)
- 1 cup granulated sugar
- 1 cup heavy cream
- 1 cup dark chocolate (melted and cooled)
- 1 tsp vanilla extract
- 2 large eggs
For the Topping:
- ½ cup chocolate ganache
- Crushed pistachios or edible gold flakes (optional, for garnish)
Preheat the oven to 325°F (160°C). Line a baking pan with parchment paper.Make the Crust: Mix chocolate cookie crumbs, melted butter, and sugar. Press into the bottom of the pan and bake for 10 minutes. Let cool.Make the Filling: Beat cream cheese and sugar until smooth. Add heavy cream, melted chocolate, and vanilla extract. Mix well. Add eggs one at a time, mixing until just combined.Pour the filling over the crust and bake for 30-35 minutes, or until the edges are set but the center is slightly wobbly.Let the cheesecake cool completely, then refrigerate for at least 4 hours.Add the Topping: Spread chocolate ganache over the chilled cheesecake and garnish with crushed pistachios or gold flakes. Cut into bars and serve.
