Ingredients
  

For the Crust:

  • cups chocolate cookie crumbs
  • 6 tbsp unsalted butter (melted)
  • 2 tbsp granulated sugar

For the Cheesecake Filling:

  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1 cup dark chocolate (melted and cooled)
  • 1 tsp vanilla extract
  • 2 large eggs

For the Topping:

  • ½ cup chocolate ganache
  • Crushed pistachios or edible gold flakes (optional, for garnish)

Instructions
 

  • Preheat the oven to 325°F (160°C). Line a baking pan with parchment paper.
    Make the Crust: Mix chocolate cookie crumbs, melted butter, and sugar. Press into the bottom of the pan and bake for 10 minutes. Let cool.
    Make the Filling: Beat cream cheese and sugar until smooth. Add heavy cream, melted chocolate, and vanilla extract. Mix well. Add eggs one at a time, mixing until just combined.
    Pour the filling over the crust and bake for 30-35 minutes, or until the edges are set but the center is slightly wobbly.
    Let the cheesecake cool completely, then refrigerate for at least 4 hours.
    Add the Topping: Spread chocolate ganache over the chilled cheesecake and garnish with crushed pistachios or gold flakes. Cut into bars and serve.

Notes

  • For a no-bake version, use a pre-baked crust and refrigerate the filling until set.
  • Store in the refrigerator for up to 5 days.
