Ingredients
  

  • 4 slices of thick brioche or challah bread
  • 4 large eggs
  • 1 cup heavy cream
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup custard or creme brulee filling (store-bought or homemade)
  • 2 tbsp unsalted butter (for cooking)
  • 2 tbsp turbinado sugar (for caramelizing)
  • Powdered sugar and fresh berries (for garnish, optional)

Instructions
 

  • Prepare the Custard Filling: If using homemade custard, prepare it ahead of time and let it cool.
    Make the French Toast Batter: In a bowl, whisk together eggs, heavy cream, granulated sugar, and vanilla extract.
    Assemble the French Toast: Cut a pocket into each slice of bread and fill it with the custard.
    Cook the French Toast: Heat butter in a skillet over medium heat. Dip each stuffed bread slice into the egg mixture, ensuring it’s fully coated. Cook until golden brown on both sides.
    Caramelize the Top: Sprinkle turbinado sugar on top of each slice and use a kitchen torch to caramelize the sugar until bubbly and golden.
    Serve: Dust with powdered sugar and garnish with fresh berries if desired. Serve immediately.

Notes

  • Use day-old brioche for better texture.
  • If you don’t have a kitchen torch, you can broil the French toast in the oven for 1-2 minutes to caramelize the sugar.
  • For a lighter version, substitute half-and-half for heavy cream.
