Ingredients
  

  • 12 oz fettuccine or pasta of your choice
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • cups heavy cream
  • 1 cup grated parmesan cheese
  • 3 cups fresh spinach leaves
  • Salt and black pepper to taste
  • ¼ tsp nutmeg for extra warmth Optional

Instructions
 

  • Cook the Pasta:
    Bring a large pot of salted water to a boil.
    Cook pasta according to package instructions. Drain and set aside.
  • Make the Sauce:
    In a large skillet, melt butter over medium heat.
    Add garlic and sauté for 1-2 minutes until fragrant.
    Pour in heavy cream and bring to a gentle simmer.
  • Incorporate Cheese and Spinach:
    Reduce heat to low and stir in parmesan cheese until melted and smooth.
    Add fresh spinach and cook until wilted, about 2-3 minutes.
  • Combine Pasta and Sauce:
    Add the cooked pasta to the skillet, tossing to coat evenly in the sauce.
    Season with salt, pepper, and nutmeg if using.
  • Serve:
    Plate the pasta and garnish with extra parmesan or fresh herbs if desired.

Notes

  • Use freshly grated parmesan for the best flavor.
  • Swap heavy cream with half-and-half for a lighter option.
