Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup fresh or frozen cranberries
  • 1 tbsp orange zest
  • ¾ cup fresh orange juice
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • ½ cup plain yogurt or sour cream
  • 1 tsp  vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 3 tbsp orange juice

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
    In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
    Stir in cranberries and orange zest.
    In a separate bowl, mix orange juice, egg, melted butter, yogurt, and vanilla extract.
    Combine wet ingredients with dry ingredients until just mixed. Do not overmix.
    Pour the batter into the prepared loaf pan and smooth the top.
    Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
    Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
    For the glaze, whisk powdered sugar and orange juice until smooth. Drizzle over the cooled bread.

Notes

  • Fresh cranberries can be substituted with dried cranberries, but reduce the quantity to ¾ cup.
  • For a richer flavor, add ½ cup chopped nuts like walnuts or pecans.
  • Store in an airtight container for up to 3 days or freeze for longer storage.
