Ingredients
  

  • 2 boneless, skinless chicken cutlets
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 tbsp olive oil (for cooking)
  • 2 cups kale, chopped and massaged
  • ¼ cup Caesar dressing (store-bought or homemade)
  • 4 slices of bread (sourdough or ciabatta recommended)
  • ¼ cup shaved Parmesan cheese (for topping)
  • Salt and pepper to taste

Instructions
 

  • Prepare the Chicken Cutlets:
    Season the chicken cutlets with salt and pepper.
    Dip each cutlet into the beaten egg, then coat with a mixture of breadcrumbs and grated Parmesan cheese.
    Heat olive oil in a skillet over medium heat. Cook the chicken cutlets for 4-5 minutes per side, or until golden brown and cooked through. Set aside.
    Prepare the Kale:
    In a bowl, massage the chopped kale with a drizzle of olive oil for 1-2 minutes to soften it.
    Toss the kale with Caesar dressing until evenly coated.
    Assemble the Sandwich:
    Toast the bread slices lightly.
    Layer each sandwich with a chicken cutlet, dressed kale, and shaved Parmesan cheese.
    Top with the second slice of bread and serve immediately.

Notes

  • For a lighter version, use grilled chicken instead of breaded cutlets.
  • Substitute kale with romaine lettuce if preferred.
