Instructions
Prepare the Cauliflower: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, and salt. Spread evenly on the baking sheet.
Roast: Bake for 20-25 minutes until the cauliflower is tender and slightly crispy.
Coat with Buffalo Sauce: Remove the cauliflower from the oven and toss with buffalo sauce until fully coated. Return to the oven for an additional 5 minutes.
Assemble the Wraps: Warm the tortillas. Spread a generous layer of dressing in the center of each tortilla. Add lettuce, tomatoes, onions, and the buffalo cauliflower.
