Ingredients
  

  • 1 medium head of cauliflower, cut into florets
  • 1 cup buffalo sauce (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • 4 large tortillas or wraps
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup red onion, thinly sliced
  • ½ cup ranch or blue cheese dressing
  • Optional toppings: sliced avocado, crumbled feta, or fresh cilantro

Instructions
 

  • Prepare the Cauliflower: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, and salt. Spread evenly on the baking sheet.
  • Roast: Bake for 20-25 minutes until the cauliflower is tender and slightly crispy.
  • Coat with Buffalo Sauce: Remove the cauliflower from the oven and toss with buffalo sauce until fully coated. Return to the oven for an additional 5 minutes.
  • Assemble the Wraps: Warm the tortillas. Spread a generous layer of dressing in the center of each tortilla. Add lettuce, tomatoes, onions, and the buffalo cauliflower.
  • Fold and Serve: Roll the tortillas tightly into wraps. Serve immediately with extra dressing on the side.

Notes

For a gluten-free option, use gluten-free tortillas. To make it vegan, choose a plant-based dressing.
