Ingredients of this Tajin

  • 2 pieces of the saddle of lamb or boneless tender pieces
  • 4 potatoes
  • 1/2 zucchini
  • 1 tomato
  • 1 carrot
  • 1 onion
  • Green olive
  • 1/2 glass of virgin olive oil
  • Cumin en Poudre
  • spices (including nutmeg, ginger, coriander, cinnamon …)
  • Yellow saffron (for coloring)
  • Pepper
  • salt
  • 1/2 glass of water

Preparation

1.

Pour 3/4 of a tablespoon of oil into the Tajin dish directly placed on the fire or the plate.

When the oil is hot, brown the meat on each side (about 10 min).

Lower the heat a little and place the vegetables, washed and roughly cut, in a pyramid on the meat, from the firmest to the most tender (potatoes, then carrot, then zucchini, then onions), interspersed with cumin, 14 spices , salt and pepper.

Drizzle with a little water, sprinkle with yellow saffron, to give color and place the green olives.

5.

Cover and cook over low heat for 30 minutes.

At the end of this time, place on the cooked vegetables, the tomatoes cut into pieces, cover and cook for another 15 minutes.

Serve hot, directly on the table, accompanied by tea and unleavened bread.
