INGREDIENTS: 4 PERS.

  • 2 duck breasts
  • 3 Golden apples
  • 1 shallot
  • 50 cl of Cider
  • 25 cl of semi-thick full cream
  • 15 g pat of butter
  • 1 lemon
  • Salt pepper

Let’s start with the sauce. Chop the shallot and brown it in a saucepan with the butter. Pour in the cider and let reduce for 10 minutes over medium heat. Stir in the cream and season to taste. Let reduce again for 10 minutes. You must obtain a homogeneous mixture. Keep warm.

Meanwhile, split the flesh of the duck breasts diagonally. In a non-stick frying pan, heat on the skin side without adding any fat. Leave to brown for 5 minutes. Cover and continue cooking over low heat for another 10 minutes. 1 min before the end of cooking, turn them flesh side down. Book.

Peel the apples and cut them into quarters. Place them in a bowl of water with lemon juice. Remove the fat from the pan, drain the apples and brown them in the pan for 5 min. Turn them regularly so that they do not stick. Keep warm.

Cut the duck breasts into slices, place them in a serving dish. Place the apples and cover with the cider sauce.

TIPS

For even more deliciousness, add brown sugar and a knob of butter to the pan before browning the apple quarters.
